It is obtained from a blend of 70% red grapes (Merlot, Cabernet, Pinot Nero, Carmenere) and 30% white grapes (Vespaiolo, Chardonnay, Pinot Bianco, Sauvignon, Malvasia). The pomace, very fresh and just racked, is distilled separately: the red ones are distilled immediately, while the white ones are inoculated with fermenting must and left to ferment for a few weeks before being distilled. The result is a clean, light and vinous grappa, which retains the aromatic characteristics of the original vines. The distillation takes place twice in small copper stills in a bain-marie, with a subsequent rest in stainless steel containers.
