Wine effervescence is the development of bubbles (perlage) after opening a bottle of wine as a result of the release of carbon dioxide. Carbon dioxide is a gaseous substance at room temperature, but it is very easy to dissolve in aqueous solutions, which in fact is also wine. Opening the bottle releases the gas, the bubbles of which create the typical froth of these wines.

In sparkling wines and sparkling wines, the carbon dioxide bubbles (also called pérlage) give life to the froth, enhance the aromas and the brilliance of the color, reinforce the sensation of freshness on the palate characteristic of these wines. The ideal bubbles are fine, numerous and persistent. They give life to a fine froth, more evanescent in sparkling wines and more persistent in quality sparkling wines, especially if elaborated with the classic method. The deviation from these ideal conditions (more sparse, coarse, or short-lived bubbles) represents a negative factor for the evaluation and score of the wine under examination.

The number, finesse and persistence of the bubbles in the wine are due not to the pressure, but to the structure of the wine itself. At the lowest level of the scale of the structure, there is distilled water. If oversaturated in carbon dioxide, it immediately releases all the gas in a tumultuous manner when the overpressure fails. With the increase of dissolved substances in the wine and therefore with the increase of the structure and complexity of the wine, physical properties such as density, viscosity and surface tension ensure that the release of bubbles after opening the bottle occurs in continuous and gradual way. With the same overpressure, a classic method sparkling wine with a long aging will have more numerous, fine and persistent bubbles than a younger and lighter sparkling wine.

Quality sparkling wines can be produced with two methods:

– Classic Method (traditional, champenoise): used for the production of Champagne and sparkling wines of the highest quality, it involves the refermentation of the wine in the bottle.

– Charmat Method (Martinotti): characterised by lower times and costs, it involves the refermentation of the wine in an autoclave.

Classic Method is excellent with fish and fish dishes. It should be remembered, however, that the tastier the dish, the more the sparkling wine must be decided. A simple but excellent pairing is with prawns or smoked salmon. The iodine contained in fish finds a faithful companion in the characteristic acidity of the bubbles.

It goes well with all cured meats, but the Classic Method and culatello is a decidedly excellent combination.

As an aperitif and to accompany appetisers;

In combination with desserts, especially leavened ones and creams (bubbles help to “degrease” the buttery of the cake) and excluding those with a more intense and complex flavour, such as chocolate, and ice creams, both because of the temperature and the strong aroma fruit and structure in the case of creams.
