Our vinification method is extremely traditional and is always the same used since the first harvests. The hand-picked grapes are fermented in vitrified concrete tanks, without temperature control and carrying out two daily pumping over to keep the pomace cap wet and obtain a slow extraction of tannins from the skins.

Ero stra scettico perché non conoscevo la cantina e non ho quindi mai avuto modo di assaggiare un loro prodotto, ma la bottiglia oltre che avere un’aspetto magnifico era informissima!
