Chateau Limbourg - 2016 - Pessac Leognan
The manual harvest of Merlot and Cabernet Sauvignon takes place with a careful selection of the grapes directly on the plant. The vinification takes place in temperature-controlled tanks, in stainless steel and cement, to preserve the color of the must before fermentation, maintained at moderate temperatures. The maceration lasts about a month, and the malolactic fermentations occur quickly in the tank, without passing through barriques for this vintage. The refinement takes place in barriques, with a part of new barrels and a part of barrels of a wine, selecting Burgundian barriques to best respect the vines.
