Gevrey Chambertin - 2004 - Domaine Louis Jadot
The soils are calcareous with a good proportion of clay marl, giving the wines roundness and power, as well as greater or lesser depth. The harvest is manual in small crates to preserve the integrity of the fruit. The bunches are then carefully selected by hand and destemmed. The grapes are macerated in open wooden or stainless steel vats for 3-4 weeks. During fermentation, the vats are pressed twice a day. The refinement lasts about 18 months in barrels from our cooperage, of which about a third are new.
