This Chianti Classico is a wine obtained from 100% Sangiovese grapes, harvested at the end of September and rigorously selected. The bunches are destemmed and the individual berries are selected manually before being fermented in tanks for about three weeks, with pumping over and delestage for optimal extraction. After racking, the wine completes malolactic fermentation and is transferred to large 25 hl oak barrels for aging for 18 months, which softens the tannins and preserves the delicate fruity notes. In the glass, it presents itself with a dark and rich red; on the nose it releases a powerful aroma of dark cherry, enriched by floral hints. In the mouth, it offers a marked acidity, balanced tannins and a pleasant softness, perfectly reflecting the terroir of Capaccia.
