The Champagne region is at the northernmost tip of the world’s viticultural regions, with lower average temperatures than any other French wine region. In this type of cool climate, the growing season is rarely warm enough to ripen grapes to the levels required for standard winemaking. Even in temperate years, Champagne grapes still carry the acidity characteristic of a marginal climate, and it was only the discovery of secondary fermentation that provided a style of wine capable of harnessing—and even embracing—this acidity.
Pinot Noir, Pinot Meunier and Chardonnay are the main grape varieties used to produce Champagne. Pinot Noir brings a good weight to the palate and darker, meatier aromas. Pinot Meunier provides good acidity and a certain fruitiness that is especially evident in younger wines. While Chardonnay brings elegance and finesse to Champagnes, along with a certain creamy smoothness and dried fruit aromas.
