La Barbera di Marchesi di Barolo rappresenta una testimonianza della viticoltura piemontese degli anni Settanta e dell’antica tradizione della storica cantina delle Langhe. Dopo oltre cinquant’anni di affinamento, se conservata in condizioni ottimali, si presenta con un colore granato tenue dai riflessi aranciati. Il bouquet è molto evoluto e complesso, con sentori di ciliegia sotto spirito, prugna secca, confettura di frutti rossi, cuoio, tabacco, cacao, sottobosco, funghi secchi, spezie dolci e leggere note balsamiche. Al palato mostra una struttura ormai delicata ma ancora armonica, sostenuta dalla tipica acidità della Barbera che può contribuire a mantenerne vivacità e freschezza anche dopo decenni. Il finale è elegante e persistente, con richiami di frutta essiccata, spezie, liquirizia e note terziarie mature.

Si abbina idealmente a agnolotti del plin, tajarin al ragù, brasato di manzo, bollito misto piemontese, coniglio arrosto, faraona, risotto ai funghi porcini, arrosti di vitello, formaggi stagionati e tome piemontesi. Per una bottiglia di questa età sono preferibili piatti eleganti e non eccessivamente speziati, capaci di valorizzarne la finezza e la complessità evolutiva.
