Di proprietà della famiglia Ondet dalla fine del XIX secolo, lo Château Chauvin è stato acquisito nel maggio 2014 da Sylvie Cazes, figura imprescindibile del vigneto bordolese. Situati tra Cheval Blanc e Rol Valentin, i 15 ettari della proprietà godono di una posizione ideale nella denominazione Saint-Émilion. Il vigneto, suddiviso in unico appezzamento, ospita prevalentemente merlot (75%), che cresce su un terreno argilloso-calcareo con grande capacità di drenaggio. Nella zona più argillosa della tenuta vengono coltivati cabernet franc (20%) e cabernet sauvignon (5%). 

L’aspetto dello Château Chauvin è di un’intensità e una profondità notevoli. Il bouquet evoca note di more, ciliegie e ribes in gioventù, per poi evolversi in aromi di cuoio e sigaro. Al palato si ritrova appieno tutta la nobiltà che si lasciava presagire all’olfatto. I tannini sono ricchi e persistenti. 

Il vino può essere tranquillamente conservato per una quindicina d’anni.
