Cognac, a spirit renowned worldwide, has been governed by an AOC since 1909, which regulates its production. Only spirits produced from eaux-de-vie originating from the crus of the Cognac AOC may bear this name. Cognac must be distilled and aged on-site using authorized techniques: double distillation in a copper pot still, aging in oak barrels, and adherence to a minimum aging period. A good cognac is produced only through a complex production process. It never comes from the brandy of a single cru, but from a blend of brandies of different ages and crus, in some cases up to a hundred. To determine the age of a cognac, only the years spent aging in wooden barrels or barriques are considered. In fact, once transferred to a glass container, the aging of the brandy stops. As it ages, cognac becomes more complex, acquiring more aromas (spices, pepper, and cinnamon) and more flavor. Only cognacs produced from the Petite Champagne and Grande Champagne crus (minimum 50%) may bear the Fine Champagne designation.
