Mondeserto Passito is a meditation wine obtained from pure Prosecco grapes grown in the hilly vineyards of Valdobbiadene DOCG, characterized by eco-friendly management without the use of insecticides or herbicides. The grapes, partly coming from vineyards over 40 years old and partly dating back to the early twentieth century, are subjected to a drying process for six months on a rack and manual pressing, with a year's refinement in stainless steel without filtration, following an ancient method. With an alcohol content of 15%, this passito is ideal to accompany blue cheeses and foie gras, with a production limited to about 2500 bottles per year.
