Barolo DOCG is a fine wine obtained from 100% Nebbiolo grapes, grown in the renowned municipalities of Barolo, Monforte d'Alba and Verduno. The vineyards, located at an altitude of 280-300 m with south-west exposure, grow on marly-calcareous soils and are trained using the Guyot system. The plants, 10-12 years old, offer a yield of 70 quintals per hectare. The harvest takes place in October, with an alcohol content of approximately 14% Vol. After harvesting, the grapes undergo destemming and soft pressing, followed by fermentation in stainless steel at 28°C with maceration on the skins for 15 days. The wine ages for 36 months in French barriques and further refines for 6 months in the bottle. The result is a Barolo with a garnet red color with orange hues, an intense, complex and ethereal aroma, and a warm, full and dry taste. Perfect with red meats, game, stews and mature cheeses. Recognized with excellent scores by critics such as James Suckling (91/100) and Falstaff (92/100).
