Dieser Barbaresco Pajè 2010 spiegelt die Produktionsphilosophie des Weinguts Roagna perfekt wider, da es sich um einen traditionellen Wein handelt, der jedoch stets mit Blick auf Innovation hergestellt wird. Der "Pajè" wird aus reinen Nebbiolo-Trauben hergestellt, die aus einem einzigen historischen Weinberg stammen, der seit 1953 der Familie Roagna gehört. Die Qualität der Trauben ist dank des Kalksteins im Boden und des Alters der Reben von etwa 40-50 Jahren sehr hoch. Die Gärung erfolgt spontan mit autochthonen Hefen in großen Holzfässern, mit einer Maischegärung auf den Schalen unter vollständiger Untertauchung für etwa zweieinhalb Monate. Es folgt eine 5-jährige Reifung in großen neutralen Eichenfässern. Der Barbaresco "Pajè" zeigt sich im Glas in einem Rubinrot mit klaren Granatreflexen. Die Nase bietet ein intensives und komplexes Bouquet von würzigen und balsamischen Noten von Lakritz, getrockneten Blumen, reifen Kirschen und Tabak. Der Schluck ist kräftig und elegant, traditionell streng, ausgewogen und anhaltend.
