Der Cognac, eine weltberühmte Spirituose, profitiert seit 1909 von einer AOC (kontrollierte Ursprungsbezeichnung), die seine Produktion reglementiert. Nur Spirituosen, die aus Branntwein hergestellt werden, der aus den Crus der AOC Cognac stammt, dürfen diesen Namen tragen. Cognac muss vor Ort nach zugelassenen Techniken destilliert und gelagert werden: doppelte Destillation in einer Kupferbrennblase, Reifung in Eichenfässern und Einhaltung einer Mindestreifezeit. Ein guter Cognac entsteht nur durch einen komplexen Herstellungsprozess. Er stammt nie aus dem Branntwein eines einzigen Cru, sondern aus der Vereinigung von Branntweinen unterschiedlichen Alters und verschiedener Crus, in einigen Fällen bis zu hundert. Um das Alter eines Cognacs zu bestimmen, werden nur die Jahre der Lagerung im Fass oder in Eichenbarriques berücksichtigt. Mit der Umfüllung in ein Glasgefäß wird die Reifung des Branntweins nämlich unterbrochen. Mit zunehmendem Alter wird der Cognac komplexer, erhält mehr Aromen (Gewürze, Pfeffer und Zimt) und mehr Geschmack. Nur Cognacs, die aus den Crus Petite Champagne und Grande Champagne (mindestens 50 %) hergestellt werden, dürfen die Bezeichnung Fine Champagne tragen.
