Der Brunello di Montalcino der Fattoria dei Barbi wird seit 1892 hergestellt. Die Philosophie der Familie Colombini und der Fattoria dei Barbi war es schon immer, die innovativste Technologie zu kennen und zu studieren und sie mit der besten Tradition zu verbinden, um alles, was produziert wird, zu verbessern, ohne jemals seine Typizität zu verändern. Die Weinberge der Fattoria dei Barbi befinden sich auf Schiefer- und Kalkböden mit Südausrichtung; die aktuellen Weinberge wurden zwischen 1975 und 2017 angelegt. Die Trauben werden gemaischt und entrappt, dann erfolgt eine schnelle Temperaturabsenkung auf 16°C in einer geschützten CO2-Umgebung. Dieser Kühlprozess der Schale ermöglicht eine stärkere Extraktion des Inhalts. Die alkoholische Gärung dauert etwa 18 Tage bei einer kontrollierten Temperatur von 27°- 28°C. Nach dem Abstich folgt die malolaktische Gärung, dann reift der Wein mindestens 2 Jahre in kleinen Holzfässern.
