Der landwirtschaftliche Betrieb Capanna, seit 1957 im Besitz der Familie Cencioni, liegt nördlich von Montalcino im Gebiet Montosoli. Er gilt als eine der besten Brunello-Cru-Lagen und wird noch heute ausschließlich als Familienbetrieb geführt, mit der Beratung des Önologen Paolo Vagaggini. Die Weinberge, etwa 20 Hektar, wurden in den besten Lagen des Betriebs angelegt und mit der Leidenschaft und Erfahrung von Generationen von Winzern bewirtschaftet. Die Ernte, die ausschließlich manuell erfolgt, ermöglicht es, die am besten geeigneten Trauben für die Herstellung jedes einzelnen Weins auszuwählen. Aus dieser Auswahl und einer Reifung in slawonischen Eichenfässern entsteht nach 4 Jahren der Brunello di Montalcino. Für den Brunello, der zur Riserva bestimmt ist, sind es 5 Jahre. Aufgrund der langen Reifung und der Sorgfalt und Aufmerksamkeit, die ihm bei der Herstellung zuteilwird, gilt der Brunello di Montalcino heute als einer der wertvollsten und exklusivsten Rotweine, der zu Wildgerichten, Braten von rotem Fleisch und gereiftem Käse passt, aber auch ein großartiger Meditationswein ist.
