Château Larose-Monteils ist ein süßer Weißwein von großem Reiz, der zur prestigeträchtigen Appellation Sauternes in der Gemeinde Preignac gehört und sich dadurch auszeichnet, dass er ein kostbarer Nektar ist, der durch die Wirkung des Edelfäule auf die Sémillon- und Sauvignon Blanc-Trauben gewonnen wird. Dieser spezielle Jahrgang präsentiert sich mit einer Farbgebung, die zu dunklem Bernstein und altem Kupfer tendiert und eine fortgeschrittene Reife offenbart, die in der Nase ein komplexes Aromaspektrum aus getrockneten Aprikosen, Datteln, gebranntem Karamell und subtilen Noten von Schokolade und Kastanienhonig zum Ausdruck bringt. Im Mund ist die Struktur dicht und umhüllend mit einer deutlichen Restsüße, die jedoch durch eine noch vorhandene Säureader ausgeglichen wird, die dem Schluck Schwung verleihen kann und in einem sehr langen Abgang endet, der an kandierte Früchte und orientalische Gewürze erinnert. Er findet seine ideale Kombination in sehr reifen Blauschimmelkäsesorten wie pikantem Gorgonzola oder Roquefort oder als Begleitung zu Foie Gras, serviert bei einer Temperatur von ca. 10 Grad.
