Château Larose-Monteils ist ein edelsüßer Weißwein von großem Reiz, der zur prestigeträchtigen Appellation Sauternes in der Gemeinde Preignac gehört. Er zeichnet sich als kostbarer Nektar aus, der durch die Edelfäule auf Sémillon- und Sauvignon Blanc-Trauben gewonnen wird. Dieser spezielle Jahrgang präsentiert sich in einer Farbgebung, die zu dunklem Bernstein und altem Kupfer tendiert und eine fortgeschrittene Reife offenbart, die in der Nase ein komplexes Aromenspektrum aus getrockneten Aprikosen, Datteln, gebranntem Karamell und subtilen Noten von Schokolade und Kastanienhonig zum Ausdruck bringt. Am Gaumen ist die Struktur dicht und umhüllend mit einer bedeutenden Restsüße, die jedoch durch eine noch vorhandene Säureader ausgeglichen wird, die dem Schluck Schwung verleiht und in einem sehr langen Abgang endet, der an kandierte Früchte und orientalische Gewürze erinnert. Er findet seine ideale Begleitung in stark gereiften Blauschimmelkäsesorten wie pikantem Gorgonzola oder Roquefort oder als Begleitung zu Foie Gras, serviert bei einer Temperatur von etwa 10 Grad.
