Der Weinberg „Demoiselles“, der sich derzeit im Besitz des Hauses Louis Latour befindet, hat seinen Namen von zwei Schwestern, Adèle und Julie Voillot. Das Haus besitzt heute 0,51 Hektar, die sich im oberen Teil des Hügels befinden. Die Cuvée wurde nach dem traditionellen Savoir-faire des Weinguts vinifiziert und ausgebaut: mit malolaktischer Gärung und einer Reifung in Eichenfässern (100 % neu) für 8-10 Monate. Der Wein hat eine hellgoldene Farbe und drückt Fülle, Reichtum und Komplexität von Fruchtaromen und Honignoten aus. Am Gaumen besitzt er eine großartige Struktur und eine bemerkenswerte Weichheit. Der Abgang ist intensiv und sehr anhaltend. Wir empfehlen, ihn bei einer Temperatur von etwa 11 °C zu Geflügel in Sauce zu servieren. Der Stil des Hauses ist präzise und klar definiert: raffinierte und sehr elegante Rotweine; und reichhaltige und ausgewogene Weißweine.
