Echézeaux, der an den Grand Cru Grands-Echézeaux grenzt, der ihn vom Clos de Vougeot trennt, ist ein 30 Hektar großer Grand Cru, der in den Hügeln liegt. Weniger prestigeträchtig als sein großer Bruder, ist der Echézeaux dennoch sehr begehrt. Der Echézeaux von Emmanuel Rouget ist einer der begehrtesten Weine der Appellation. Es ist ein vollmundiger Wein mit einem weichen Charakter dank seines niedrigen Säuregehalts und seiner extrem seidigen Tannine. Sein Aussehen ist leuchtend, brillant und von einem tiefen Rot. Die Aromen sind subtil und elegant und erinnern an edle exotische Hölzer, wie Zeder.
Emmanuel Rouget ist bekannt für die große Präzision, mit der er sowohl im Weinberg als auch im Keller arbeitet. Die Erträge seines Weinbergs sind sehr niedrig und es wird besonderes Augenmerk auf den Reifegrad der Trauben gelegt, um die Frische in den Weinen zu erhalten. Die Trauben werden vollständig entrappt, der Tradition des Weinguts folgend; die Gärung ist langsam und erfolgt nach der Vorfermentation mit Kaltmazeration, die von Jayer erfunden wurde. Die Weine von Emmanuel Rouget sind seidig, frisch und energisch; es sind außergewöhnliche Weine, die Liebhaber großer Burgunderweine mindestens einmal im Leben probieren sollten.
