Es ist ein Wein, der den strengen Stil des Weinguts widerspiegelt: minimale Eingriffe, Aufmerksamkeit für den Boden und die Suche nach Gleichgewicht statt Kraft.
In der Nase präsentiert er sich intensiv und reif, mit Aromen von dunklen Früchten (Pflaume, Brombeere), dunklen Gewürzen, Lakritz und mediterranen Kräutern. Mit der Sauerstoffzufuhr treten komplexere Noten von Erde, Graphit und eine leichte balsamische Komponente auf, ein Zeichen für die Entwicklung des Jahrgangs.
Im Mund ist er voll und strukturiert, mit wichtigen, aber durch die Zeit gut integrierten Tanninen. Die für Gauby-Weine typische Frische vermeidet jedes Gefühl von Schwere und unterstützt den Trinkfluss. Der Abgang ist lang, trocken, mit würzigen und mineralischen Rückmeldungen.
