Der Mazis-Chambertin Grand Cru 1986 der Hospices de Beaune (Cuvée Madeleine Collignon) ist ein seltener und prestigeträchtiger Wein, das Ergebnis einer historischen Schenkung, die 1976 von Jean Collignon im Gedenken an seine Mutter erfolgte. Obwohl der Jahrgang 1986 für Burgund komplex war, produzierte die Côte de Nuits Weine von überragender Qualität, die heute, nach fast vierzig Jahren, eine aristokratische Reife zeigen.
Der Wein präsentiert sich in einem entwickelten, tiefen Granatrot und verströmt ein tertiäres Bouquet, das von Noten von Unterholz, Leder, Pilzen und feuchter Erde dominiert wird, mit Nuancen von Lakritz und dunklen Gewürzen, die die ursprüngliche rote Frucht ersetzt haben. Um die Komplexität voll auszuschöpfen, ohne die Oxidation eines so alten Spätburgunders zu beschleunigen, liegt die ideale Serviertemperatur bei etwa 17-18 °C. Die bevorzugten Kombinationen sind äußerst raffinierte Gerichte wie Rinderfilet mit Trüffeln, gebratenes Rebhuhn mit Linsen oder der klassische Coq au Chambertin, die einem Wein von solcher Dichte und Geschichte standhalten können.
