The Barolo Paiagallo Mirafiore ages for two years in medium- and large-capacity Allier barrels ( from 2,000 to 14,000 liters). This aging in oak barrels further refines the tannins without increasing the oaky sensation and achieves the right balance between the aromas of the grapes and that of the wood. After the aging in wood, fining is performed, if necessary, to further smooth out any remaining rough edges and achieve optimal clarification of the wine. It is then bottled and aged for at least another year before being released. The color is ruby red with garnet highlights. The aroma is rich with dark berry fruit: cherry, blackberry, and plum, with distinct hints of spices such as cinnamon, cloves, and black pepper. On the palate, the soft, sweet tannins blend with a strong fruity sensation. The acidity , well balanced with the tannins, gives a sensation of freshness that prolongs the final sensation.
