Il Château Angélus è una perla rara di Saint-Émilion che incarna l'eleganza senza tempo di un'annata leggendaria per la riva destra di Bordeaux, giunta oggi a un'evoluzione di estrema nobiltà e raffinatezza. Alla vista si presenta con un colore granato profondissimo e scarico, che sfuma verso riflessi mattone e aranciati tipici di un vino che ha attraversato sette decenni di storia. Il bouquet è un compendio di note terziarie aristocratiche: inizialmente timido, si apre lentamente su sentori di tartufo nero, tabacco da pipa, cuoio antico e scatola di sigari, intrecciati a una sottile nota di prugna sotto spirito e violetta appassita che ancora richiama l'anima del Merlot e del Cabernet Franc.
Al palato, il vino è un esercizio di equilibrio e setosità, dove la struttura un tempo potente si è trasformata in una trama vellutata e sottile, quasi fragile ma ancora sorretta da una nobile acidità che ne garantisce la persistenza. Il sorso è armonico e profondo, con un finale che sfuma su note sapide, minerali e di sottobosco, rendendolo il compagno ideale per piatti di straordinaria finezza come una pernice stufata ai porcini o un filetto alla Rossini con scaglie di tartufo nero, capaci di rispettare la delicatezza di un vino così antico. Si abbina magnificamente anche a formaggi a pasta dura estremamente stagionati come un Comté 36 mesi, dove la complessità del latte incontra la stratificazione aromatica di un Angélus che ha ormai raggiunto lo stato di mito enologico.
