Quando la famiglia Aubert acquista lo Château La Couspaude nel 1963, tutto è da rifare: mancano vigne, non c’è nessuna cantina e l’edificio versa in uno stato pietoso. L’unica cosa intatta di questo futuro Grand Cru di Saint-Émilion era il magnifico e raro terroir argillo-calcareo. Per 30 anni la famiglia Aubert ha pazientemente rinnovato il vigneto, circondandosi delle persone giuste, come il celebre enologo e consulente Michel Rolland. Questo gran lavoro è stato premiato nel 1993 con la promozione a Grand Cru Classé. 

Le vigne di circa 35 anni di età si estendono su 7 ettari; le uve sono vendemmiate a mano e selezionate attentamente. L’assemblaggio è composto al 75% da merlot, al 20% da cabernet franc e al 5% da cabernet sauvignon. 

La vinificazione viene effettuata nel pieno rispetto della tradizione di Bordeaux: le uve sono sottoposte a una macerazione prefermentativa a bassa temperatura e il vino viene lasciato maturare in barrique nuove dai 18 ai 22 mesi a seconda delle annate. 

Lo Château La Couspaude esprime una pregevole palette aromatica che spazia dal ribes nero al pepe nero e che è sostenuta da delicati rimandi boisé. Al palato rivela tannini strutturati e la consistenza che ci si attende da un Saint-Émilion Grand Cru.
