Il Mazis-Chambertin Grand Cru 1986 degli Hospices de Beaune (Cuvée Madeleine Collignon) è un vino raro e di grande prestigio, frutto di una donazione storica effettuata nel 1976 da Jean Collignon in memoria della madre. Nonostante l'annata 1986 sia stata complessa per la Borgogna, la Côte de Nuits ha prodotto vini di qualità superiore che oggi, dopo quasi quarant'anni, mostrano una maturità aristocratica.

Il vino si presenta con una tonalità granata evoluta e profonda, sprigionando un bouquet terziario dominato da note di sottobosco, cuoio, funghi e terra bagnata, con sfumature di liquirizia e spezie scure che hanno sostituito l'originale frutto rosso. Per apprezzarne appieno la complessità senza accelerare troppo l'ossidazione di un Pinot Nero così datato, la temperatura di servizio ideale è di circa 17-18°C. Gli abbinamenti d'elezione sono piatti di estrema raffinatezza come il filetto di manzo al tartufo, la pernice arrosto con lenticchie o il classico coq au Chambertin, capaci di reggere il confronto con un vino di tale densità e storia.
