Il Barolo di Bersano è un vino rosso piemontese di stile tradizionale, prodotto da Nebbiolo in un’annata considerata molto favorevole per struttura ed equilibrio, con vini generalmente longevi e ancora oggi capaci di esprimersi con complessità evoluta.
Nel bicchiere si presenta con un colore granato ormai maturo, con riflessi aranciati tipici dell’evoluzione. Al naso sviluppa un profilo terziario ricco e classico, con note di ciliegia matura e amarena sotto spirito, prugna disidratata, rosa appassita e viole secche, seguite da sentori più evoluti di tabacco, cuoio, sottobosco, spezie dolci e accenni di terra umida e funghi secchi. In bocca è strutturato e ancora abbastanza vigoroso, con tannini presenti ma levigati dal tempo, sostenuti da una buona acidità che mantiene il vino vivo e non appesantito, mentre il finale tende verso note balsamiche, terrose e leggermente speziate.
È un Barolo ormai in piena fase di maturità avanzata, spesso al suo apice o poco oltre, che dà il meglio con una lunga ossigenazione e con piatti importanti come brasati, selvaggina, cinghiale in umido, funghi porcini e formaggi stagionati, dove la sua complessità aromatica e la sua struttura possono esprimersi senza essere sovrastate.
