The Gattera Reserve is produced exclusively in the finest vintages, using grapes from the most historic part of the vineyard. The grapes are harvested by hand towards the end of September. Once in the cellar, they undergo gentle pressing and alcoholic fermentation begins with indigenous yeasts in temperature-controlled tanks. This is followed by maceration on the skins using the submerged cap technique for approximately 3-4 weeks. After this phase, the wine is racked to complete malolactic fermentation. At the beginning of winter, the wine is transferred to large oak barrels, where it begins a prolonged period of aging. After bottling, it ages for approximately three years in the bottle before being released for sale, thus reaching its full maturity.
