The 1979 Château Talbot is an authoritative red wine from the Saint-Julien appellation, representing the quintessence of the classic and enduring style of the Médoc. Characterized by a garnet red hue with elegant brick-red highlights due to decades of aging, this wine offers an extremely refined tertiary bouquet on the nose, with notes of leather, cigar box, and brown tobacco emerging, combined with hints of undergrowth, mushrooms, and a hint of dried wild berries. On the palate, the structure is silky and harmonious, with fully resolved tannins that impart an extremely smooth sensation, balanced by a still perceptible acidity that lends freshness and vitality to the drink despite the advanced age of the bottle. The 1979 vintage is considered historic for the estate, as it marked the debut of the second Connétable Talbot wine, and although a long way has passed since the harvest, well-preserved examples still display a noble aromatic persistence with spicy and mineral aftertaste. It is recommended to serve the wine at a temperature of around 17-18 degrees, preferring gentle handling and rapid decanting to separate any natural sediment, pairing it with mature red meat dishes, game birds or mature hard cheeses.
