Liston’s Amarone is an extremely rare historical testament to the Valpolicella tradition, produced using the drying method that has made Amarone famous around the world. The limited information available indicates that this wine is made from grapes grown on the hills of Mezzane and Tregnago, with a structure designed for very long aging.
After sixty years of aging, when stored under optimal conditions, it displays a very pale garnet color with orange highlights. The aromatic profile is extremely complex and mature, with hints of fruit preserved in alcohol, dried cherry, currant, prune, sweet tobacco, leather, cocoa, oriental spices, fine woods, ethereal notes, and light balsamic undertones. The long aging process may have developed additional notes of dried mushrooms, forest floor, walnut, and caramel.
On the palate, it is smooth, velvety, and well-balanced, with fully integrated tannins, noticeable acidity, and a long finish characterized by notes of raisins, dried fruit, spices, and the typical elegant hint of bitterness that distinguishes great Amarones. In the best-preserved bottles, it retains a surprising vitality and complexity of flavor.
It pairs beautifully with braised beef, small game, stewed wild boar, hare salmì, slow-cooked stews, truffle-infused filet mignon, hearty roasts, and very aged cheeses such as aged Monte Veronese, Parmigiano Reggiano aged over 36 months, and blue cheeses. It can also be enjoyed on its own as a meditation wine.
