Banyuls wines are “fortified” wines: this isis alcohol is added to the must to halt fermentation, which allows some of the grapes’ natural sugar to be preserved. Aging plays a fundamental role. Depending on the type of wine you wish to produce, it cantake take place in two different ways. Oxidative wines (“rancio”), generally produced by blending different vintages or older vintages, are aged in barrels or demijohns exposed to the sun. Wines, on the other hand, where the aim is to preserve the fruit, are bottled young to avoid oxidation. This results in a “Rimage” produced from a single vintage. It should be noted that to qualify for the Grand Cru designation (always for red wines), aging must be at least 30 months (ratheras one year for Banyuls), and black Grenache must account for at least 75%, compared to the 50% required for Banyuls. White Banyuls are made from Muscat of Alexandria, White Grenache, and Malvasia. With a beautiful golden-amber color, they offer notes of candied fruit, honey, and apricot, as well as hints of roasted coffee and white flowers. Production of white Banyuls remains limited.
