Gaja’s Barbaresco is a true legend of Piedmontese winemaking and comes from a vintage considered exceptional for the aging of great red wines made from Nebbiolo grapes. This particular bottle embodies the history of the region, as it was produced by harvesting and blending grapes from the family’s finest vineyards even before Giovanni Gaja introduced the philosophy of single-vineyard wines. In the glass today, it displays a captivating garnet color with orange hues and unfolds an extraordinarily complex bouquet ranging from withered rose petals to black licorice, with hints of leather, tobacco, tar, and underbrush. On the palate, it astonishes with its still-vibrant freshness and a texture of silky tannins that deliver a deep, austere, and infinitely persistent mouthfeel, despite more than sixty years having passed since the harvest. As a mature, noble wine of extreme structural complexity, the ideal pairing calls for equally rich and sumptuous dishes from the Piedmontese tradition. It pairs divinely with great meat dishes such as beef braised in Barolo, chicken livers, and game main courses—both fowl and furred game—such as hare in salmì or roe deer. It also pairs perfectly with traditional pasta dishes enriched with generous amounts of white truffle from Alba, or with very aged hard cow’s-milk cheeses such as Castelmagno or Parmigiano Reggiano aged for over thirty-six months. To enjoy it to the fullest, it is recommended to open the bottle a few hours before serving and let it breathe directly in the glass without using a decanter, to prevent overly vigorous contact with oxygen from causing its delicate tertiary aromas to fade.
