Ca' del Bosco’s Merlot is one of Franciacorta’s rarest and most “visionary” red wines, as it began as an experimental project by the winery rather than as a regular production. The 1990 vintage was the very first ever produced, and it was considered so successful that it led to the launch of this small series of single-varietal Merlot micro-batches, produced only in exceptional vintages.
This is a 100% Merlot wine from selected vineyards in Franciacorta, cultivated with great care right from the vineyard and then vinified with meticulous attention to detail, including fermentation and aging in oak, followed by a long period of maturation before release. It is conceived as a high-end red wine, more closely aligned in ambition with the great Bordeaux reds than with the classic “regional” reds of Lombardy.
With aging (we’re now talking about a wine that’s over thirty years old), the profile tends to become highly evolved: the primary fruit has now faded, giving way to notes of fruit preserved in alcohol, prunes, leather, sweet tobacco, spices, and forest floor. If the bottle has been stored properly, the wine can still be surprisingly well-preserved, with a soft, silky texture typical of mature Merlot, though it is inevitably more delicate than a great red wine still in its active phase.
At the table today, this wine pairs best with very classic, hearty dishes rather than modern cuisine: it really shines with braised meats, beef stews, substantial roasts, game stews such as wild boar or venison, and dishes with thick sauces made from meat stock or mushrooms. Mature, flavorful cheeses can also pair well, especially if they aren’t overly strong.
