It comes in various shades of red (ranging from violet to ruby, garnet, and orange) and is made from must that is macerated on the skins to extract polyphenols and the naturally occurring pigments. It is generally characterized by a wide variety of aromas (flowers, fruits, jam, herbs, spices) and by a more or less pronounced sensation of softness, body, and tannins; it should be served at a temperature between 14°C and 20°C. It pairs best with red meat, game, cheese, and any dishes based on slow cooking and rich sauces.
