    Champagne is located at the northernmost end of the world’s wine-growing regions and has lower average temperatures than any other French wine region. In this cool climate, the growing season is rarely warm enough for the grapes to ripen to the level required for standard winemaking. Even in moderate vintages, Champagne grapes still retain the acidity characteristic of a marginal climate, and it was only the discovery of secondary fermentation that led to a style of wine capable of utilizing—and even embracing—this acidity.

    Pinot Noir, Pinot Meunier, and Chardonnay are the main grape varieties used to make Champagne. Pinot Noir lends the palate good body and darker, meatier flavors. Pinot Meunier offers good acidity and a certain fruitiness that is particularly noticeable in younger wines. Meanwhile, Chardonnay lends Champagne elegance and finesse, along with a certain creamy smoothness and aromas of dried fruit.
