Der Brunello di Montalcino DOCG ist ein robuster und intensiver Wein aus der Region Castelnuovo dell'Abate im Herzen von Montalcino (SI), der zu 100 % aus Sangiovese Grosso-Trauben gewonnen wird. Die Ernte erfolgt manuell, gefolgt von einer Fermentation mit Mazeration in Edelstahltanks bei kontrollierter Temperatur, mit täglichen Remontagen und Délestage. Nach der alkoholischen Gärung wird der Wein einer post-fermentativen Mazeration unterzogen und in Eichenholz ausgebaut, wo die wöchentliche Batonnage etwa 4 Monate dauert, um dann weitere 20 Monate zu reifen. Am Gaumen ist der Wein kräftig, mit leichten Tanninen, weich und anhaltend. Er wird idealerweise bei 18°C in großen Gläsern serviert, begleitet von Braten von hellem oder rotem Fleisch, Geflügel, Wild und gereiftem Käse. Ein großer Klassiker der toskanischen Tradition.
