Castello Vicchiomaggio ist ein 140 Hektar (346 Hektar) großes Weingut zwischen den Städten Florenz und Siena in der Toskana. Es liegt im Zentrum des Chianti-Classico-Gebiets und produziert eine Reihe von DOCG-Weinen. Das Castello Vicchiomaggio umfasst insgesamt 34 Hektar (84 Hektar) Weinberge und 10 Hektar (25 Hektar) Olivenhaine. Sangiovese ist mit Abstand die am häufigsten vorkommende Rebsorte in den Weinbergen und wird durch einheimische Sorten wie Canaiolo und Colorino sowie internationale Sorten wie Merlot und Cabernet Sauvignon ergänzt. Diese Reben sind an Südhängen gepflanzt, um eine maximale Sonneneinstrahlung und eine optimale Reifung der Trauben zu gewährleisten. Im Weinberg werden die Trauben von Hand geerntet, um eine übermäßige Oxidation zu verhindern. Die Gärung erfolgt in Edelstahltanks bei kontrollierter Temperatur für 12-15 Tage. Anschließend wird der vergorene Saft gefiltert, um die für die Herstellung von Grappa bestimmten Traubenschalen zu entfernen. Der Chianti Classico DOCG „Gran Selezione – Le Bolle“ von Castello Vicchiomaggio entstand aus dem Wunsch heraus, dem Publikum einen „kompromisslosen“ Sangiovese anzubieten. Wein mit Charakter und Langlebigkeit.
