It comes in various shades of red (ranging from violet to ruby to garnet and orange) and is made from grape must that is macerated on the skins to extract polyphenols and the naturally occurring pigments. It is generally characterized by a wide variety of aromas (flowers, fruits, jam, herbs, spices) and by a more or less pronounced sensation of smoothness, body, and tannins; it should be served at a temperature between 14 °C and 20 °C. It pairs best with red meat, game, cheese, and any dishes that involve slow cooking and rich, full-bodied sauces.
