Der Brunello di Montalcino DOCG ist ein robuster und intensiver Wein aus der Gegend von Castelnuovo dell'Abate, im Herzen von Montalcino (SI), der zu 100 % aus Sangiovese Grosso-Trauben gewonnen wird. Die Ernte erfolgt manuell, gefolgt von einer Fermentation mit Mazeration in temperaturkontrollierten Edelstahltanks, mit täglichem Umpumpen und Délestage. Nach der alkoholischen Gärung wird der Wein einer post-fermentativen Mazeration unterzogen und in Eichenholz verfeinert, wo die wöchentliche Bâtonnage etwa 4 Monate dauert, um dann seine Reifung für weitere 20 Monate fortzusetzen. Am Gaumen ist der Wein kräftig, mit leichten, weichen und anhaltenden Tanninen. Er ist ideal bei 18 °C in großen Gläsern zu servieren, begleitet von Braten aus weißem oder rotem Fleisch, Geflügel, Wild und reifem Käse. Ein großer Klassiker der toskanischen Tradition.
