Der Château Maucaillou Moulis 1975 ist ein Rotwein aus der Appellation Moulis-en-Médoc, gelegen im Médoc in der Region Bordeaux, die historisch für strukturierte, aber zugänglichere Weine als die großen Grand Cru Classés bekannt ist, hauptsächlich aus Cabernet Sauvignon mit Merlot und einem kleineren Anteil Cabernet Franc; der Jahrgang 1975 in Bordeaux war in seiner Jugend sehr tanninreich und konzentriert, mit Weinen, die für eine sehr lange Reifung ausgelegt waren, und nach Jahrzehnten präsentiert sich dieser Wein heute in einer voll entwickelten Phase mit einer tiefen Granatfarbe, die inzwischen in Ziegel- und Orangetöne übergegangen ist, während er in der Nase ein komplexes und delikates Profil mit Aromen von gereiften roten und schwarzen Früchten, Trockenpflaumen und leichten Konfitürenoten bietet, begleitet von tertiären Noten von Leder, Tabak, Unterholz, feuchter Erde, getrockneten Pilzen und süßen Gewürzen mit alterstypischen oxidativen Nuancen; am Gaumen ist er weich, seidig und im Vergleich zu seiner ursprünglichen Struktur eher schlank, mit vollständig geschliffenen Tanninen und einer restlichen Frische, die den Schluck noch unterstützt, und endet in einem eleganten, aber nicht besonders langen Abgang, der von erdigen und würzigen Noten geprägt ist, und was die Speisenkombinationen betrifft, passt er am besten zu nicht zu intensiven, aber schmackhaften Gerichten wie gebratenem oder geschmortem rotem Fleisch, edlem Geflügel, delikaten Eintöpfen, Pilzgerichten und gereiftem Käse.
