Der „Sito Moresco“ von Gaja ist eine Cuvée, die autochthone piemontesische Rebsorten mit internationalen Varietäten vereint – eine innovative Philosophie, die Angelo Gaja in den 1960er Jahren einführte, um die italienische Weinbereitung zu modernisieren. Es handelt sich typischerweise um eine Cuvée aus Nebbiolo, Merlot und Cabernet Sauvignon, wobei die Anteile je nach Jahrgang leicht variieren können.

Der Wein präsentiert sich in einem dunklen und intensiven Rubinrot. Er bietet ein komplexes und vielschichtiges Bouquet, dominiert von Noten reifer roter Früchte, Kirsche, Brombeere, Cassis, mit floralen Nuancen (Veilchen), würzigen, mineralischen und manchmal balsamischen oder kräuterartigen Anklängen. Am Gaumen ist er strukturiert, weich und harmonisch, mit seidigen, gut integrierten Tanninen und einer ausgezeichneten Frische, die ihn jung trinkbar macht, aber auch für eine kurze Reifung geeignet ist.

Die Trauben werden separat in Edelstahltanks bei kontrollierter Temperatur vinifiziert. Der Wein reift etwa 12 Monate in französischen Barriques, bevor er endgültig assembliert wird und eine weitere Flaschenreife durchläuft.
