    White wine is produced using various techniques that process white grapes to obtain only the juice, eliminating the skins. It can also be made from red grapes (such as Pinot Noir), immediately separating the skins from the juice, unlike the red winemaking process, which also involves macerating the skins to extract the color and nutrients. It appears yellow in various shades (from greenish to amber, through straw and gold); it is generally characterized by floral and fruity aromas and should be consumed at a serving temperature between 8°C and 14°C; on the palate, sensations of freshness and acidity prevail, although unpleasant bitterness may develop as the serving temperature increases. It pairs well with fish, shellfish, crustaceans, vegetables, and white meats, and generally with quick-cooked dishes and lightly structured sauces.
