L'Amarone della Valpolicella è un vino intenso che mette in risalto sia il savoir-faire e la tecnica dei viticoltori sia la ricchezza del terroir da cui proviene. La sua storia è relativamente recente, poiché il primo vino con questo nome è stato prodotto solo nel 1938. La denominazione di origine controllata (DOC) è stata riconosciuta nel 1968 e poi elevata al livello definitivo di denominazione di origine controllata e garantita (DOCG) nel 2010. 

Il vitigno corvina costituisce la maggior parte dell'assemblaggio, con una percentuale compresa tra il 40% e il 95%. A completamento, viene utilizzato soprattutto il vitigno rondinella. Le uve sono raccolte presto, quando hanno ancora una buona acidità, e poi vengono fatte appassire su graticci o in cassette impilabili, all'interno di appositi edifici. Una volta disidratate, fino a raggiungere circa il 40% del loro peso iniziale, vengono vinificate in modo tradizionale. L'abbondanza di zuccheri fa sì che i vini di questa denominazione presentino una gradazione superiore a 14% vol. Corposi e dall'elevato tenore alcolico, presentano tannini piuttosto intensi e aromi particolarmente concentrati di frutti rossi e spezie.
