Liston's Amarone is a rare historical testament to the Valpolicella tradition, produced using the appassimento method that has made Amarone famous worldwide. The limited information available indicates a wine made from grapes grown on the Mezzane and Tregnago hills, with a structure designed for very long aging.
After sixty years of evolution, if stored in optimal conditions, it displays a very pale garnet color with orange highlights. The aromatic profile is extremely complex and mature, with hints of fruit in alcohol, dried cherry, currant, prune, sweet tobacco, leather, cocoa, oriental spices, fine woods, ethereal notes, and light balsamic nuances. The long aging process may have developed additional notes of dried mushroom, forest floor, walnut, and caramel.
On the palate, it is soft, velvety, and harmonious, with fully fused tannins, persistent acidity, and a long finish characterized by notes of raisins, dried fruit, spices, and the typical elegant bitterness that distinguishes great Amarones. In well-preserved bottles, it maintains a surprising vitality and flavorful complexity.
It pairs beautifully with braised beef, furred game, wild boar stew, jugged hare, stews, fillet with truffles, rich roasts, and very mature cheeses such as Monte Veronese vecchio, Parmigiano Reggiano aged over 36 months, and blue cheeses. It can also be enjoyed on its own as a meditation wine.
