I Banyuls sono vini “fortificati”: si aggiunge cioè alcol al mosto per arrestare la fermentazione, il che permette di conservare una parte dello zucchero naturale dell’uva. L’invecchiamento svolge un ruolo fondamentale. In base al vino che si desidera ottenere, può avvenire in due diversi modi. I vini ossidativi (“rancio”), generalmente realizzati tramite assemblaggi di diverse annate o di vecchie annate, vengono invecchiati all’interno di botti o damigiane esposte al sole. I vini di cui si cerca invece di preservare il frutto, vengono imbottigliati giovani ed evitano l’ossidazione. Si ottiene in questo modo un “Rimage” prodotto da un’unica annata. Va detto che per ottenere la denominazione Grand Cru (sempre in rosso), l’invecchiamento deve essere obbligatoriamente di 30 mesi (anziché di un anno per i Banyuls) e la grenache nera deve rappresentare almeno il 75%, contro il 50% richiesto per i Banyuls. I Banyuls bianchi sono realizzati con moscato di Alessandria, grenache bianca e malvasia. Di un bel colore dorato e ambrato, offrono note di frutta candita, di miele e di albicocca, ma anche di torrefazione e fiori bianchi. La produzione di Banyuls bianchi resta limitata.
