Château Maucaillou Moulis 1975 is a red wine from the Moulis-en-Médoc appellation, located in the Médoc region of the Bordeaux region. This appellation is historically known for its structured yet more approachable wines than the grand cru classés, produced primarily from Cabernet Sauvignon with Merlot and a smaller amount of Cabernet Franc. The 1975 vintage in Bordeaux was highly tannic and concentrated in its youth, with wines built for very long aging. Decades later, this wine is now fully mature, with a deep garnet color now shifting toward brick red and orange highlights. On the nose, it offers a complex and delicate profile with aromas of mature red and black fruit, dried plum, and light notes of jam, accompanied by tertiary aromas of leather, tobacco, undergrowth, damp earth, dried mushrooms, and sweet spices with oxidative nuances typical of age. On the palate, it is soft, silky, and rather subtle compared to its original structure, with completely smooth tannins and a residual freshness that still supports the sip, closing on an elegant but not particularly long finish, played on earthy and spicy notes. As for food pairings, it pairs best with not too intense but flavorful dishes such as roasted or stewed red meats, noble poultry, delicate stews, mushroom-based preparations, and mature cheeses.
