Il Clos Vougeot Grand Cru 1997 di Robert Arnoux è un’espressione di straordinaria finezza e profondità, che si distingue per un approccio più setoso e aristocratico rispetto alle versioni più muscolari di questo celebre cru. Visivamente si offre con una tonalità granata luminosa e trasparente, tipica della maestria di Arnoux nel gestire l’estrazione del Pinot Noir. Il naso è un bouquet ipnotico di piccoli frutti rossi canditi, come lampone e ribes, che si intrecciano a note floreali di peonia e violetta appassita, evolvendo gradualmente verso sentori di incenso, tabacco biondo e una mineralità ferrosa che richiama la terra rossa del Clos.
Al palato, il vino sorprende per l’equilibrio magistrale tra la ricchezza dell'annata 1997 e l'eleganza stilistica del produttore: la trama tannica è finissima, quasi impalpabile, e avvolge la bocca con una morbidezza vellutata che non sacrifica mai la tensione verticale. In tavola, questo Grand Cru trova il suo connubio perfetto con piatti raffinati come un piccione arrosto ai porcini o una quaglia farcita al tartufo nero, capaci di esaltare la delicatezza del vino senza sovrastarlo. Si sposa magnificamente anche con un risotto al fondo bruno e midollo, dove la struttura del vino dialoga con la sapidità e la grassezza del piatto in un gioco di rimandi eleganti.
