Il cognac, distillato celebre in tutto il mondo, beneficia dal 1909 di un’AOC che ne regolamenta la produzione. Può essere chiamato con questo nome unicamente il distillato prodotto da acquavite proveniente dai cru dell’AOC Cognac. Il cognac deve essere distillato e invecchiato sul posto seguendo le tecniche autorizzate: doppia distillazione in un alambicco a ripasso in rame, invecchiamento in botti di rovere e rispetto di un periodo minimo di invecchiamento. Un buon cognac è prodotto solo con un processo di elaborazione complesso. Non proviene mai dall’acquavite di un solo cru, ma dall’unione di acquaviti di età e di cru diversi, in alcuni casi fino a un centinaio. Per stabilire l’età di un cognac vengono considerati solo gli anni di riposo in botte o in barrique di legno. Con il trasferimento in un recipiente di vetro, infatti, l’invecchiamento dell’acquavite si interrompe. Invecchiando, il cognac diventa più complesso, acquisisce più aromi (spezie, pepe e cannella) e più gusto. Solo i cognac prodotti dai cru Petite Champagne e Grande Champagne (minimo 50%) possono rientrare nella denominazione Fine Champagne.

I ordered three bottles, a 1999 French, recently opened, made a great impression.
The other two are a Barolo Serralunga d'Alba from Fontanafredda and a Nebbiolo d'Alba Riccheri from Marchesi di Barolo, both from 2015, which I have yet to open but the prospects are excellent.
Shipping and packaging were equally excellent, the Marchesi di Barolo bottle was longer and protruding but I still managed to protect it.
Great prices that you won't find on other similar sites.
I will definitely be back to buy more.
