Il Pouilly-Fuissé Louis Latour è un vino bianco di Borgogna prodotto al 100% da uve Chardonnay nella zona del Mâconnais, una delle aree più meridionali della Borgogna. Si tratta di un vino di stile classico della maison Louis Latour, storicamente uno dei grandi négociant borgognoni, che lavora su un’impostazione piuttosto tradizionale e fedele al territorio.
L’annata 1997 in Borgogna per i bianchi ha dato vini generalmente pronti piuttosto presto, con uno stile accessibile più che profondamente strutturato, quindi nel caso di un Pouilly-Fuissé di questa età oggi ci si trova davanti a un vino evoluto, con profumi terziari che possono includere miele, frutta secca, note di nocciola, burro e leggere sfumature ossidative tipiche dei Chardonnay invecchiati. In bocca tende a perdere parte della freschezza iniziale e a sviluppare una sensazione più morbida e rotonda, con acidità meno vibrante rispetto a un vino giovane.
Il carattere del Pouilly-Fuissé rimane comunque riconoscibile anche con il tempo: è un bianco di medio corpo, più ricco e “burroso” rispetto a Chardonnay più minerali della Côte d’Or, con una componente fruttata matura e un profilo gastronomico piuttosto che fine o austero. Louis Latour lo interpreta in modo abbastanza pulito e regolare, senza cercare eccessi di concentrazione.
